Two Filipino Nobu Head Chefs Team Up for World-Class Omakase Dinner

Filipino culinary prowess is once again in the foreground as Nobu New York Executive Chef Ricky Estrellado and Nobu Manila Head Chef Michael De Jesus took the kitchen together to deliver a smorgasbord of Filipino dishes with hints of Japanese and Peruvian influences. As disciples of the great chef Nobu Matsuhisa, they have fused the best of Japanese cuisine with timeless Filipino favorites last August 18 and 19 at Nobu Manila, City of Dreams.

It was a great opportunity to experience world-class cooking as Estrellado has been with Nobu for over two decades and now oversees the restaurant’s branches in Hudson Street and Tribeca and New York. Meanwhile, the Filipino-American De Jesus has worked in Nobu L.A and Nobu Las Vegas before being named Head Chef in Nobu Manila.

To give Filipino dishes a sprinkle of Nobu excellence, some of the dishes they served are Seared Tuna Kinilaw with Ceviche Gelee and Lapu-Lapu that can be dressed in either a Matsuhisa or Jalapeno mix. Meanwhile, Nobu’s best-seller Yellowtail was served with green mango salsa. The entrees include Crispy Pata with a dose of Laing and Short Ribs Kare-Kare. For dessert, Nobu-style Halo-Halo was served. Sushi of different flavors such as Mixed Seafood Kilawin, Saba Tinapa and Local Tuna Toyomansi was also offered to satisfy the guest’s taste buds.
